Banting Spaghetti and Meatballs

This is the closest in looks and taste you will come to spaghetti and meatballs - the banting way.

Granted, I don't have the machine to make the spaghetti from butternut, but this was R12.99 at checkers (02/03/2017) and serves around 3.


For the meatballs:
Ingredients:

500g beef mince
1 egg
1 tsp salt
Pepper
1 tbs onion powder
2 tsp oregano
Oil/holsum for frying

Method:

Mix all above ingredients together.
Roll into balls, and fry briefly to brown on all sides in some holsum or olive oil etc.
Place into an oven proof dish and bake for around 15 minutes in a 180C oven. 




For the tomato pasta sauce:
Ingredients:

1 tin tomatoes
1 tin tomato paste
1 cup water
2 tbs oregano
1/2 tsp salt
1 tbs crushed garlic
1-2 tsp sweetener

Method:

Place all of the above in a pot and simmer for 30 minutes.
Add the meatballs and simmer for a further 10 minutes.




For the butternut spaghetti:
Ingredients:

1 packet butternut spaghetti
Butter
Salt to taste

Method:

Remove from packet and steam until slightly tender. Flash fry in butter and serve!
