Liver and Onions

Liver is one of the most nutrient dense proteins. They're a power house packed full of vitamins and minerals!


Ingredients:

Liver (I used 500g)
1 cup amasi
1 large onion
1 chilli
Heba pap to dust
Salt and pepper
Holsum for frying

Method:

Wash and slice liver diagonally, then soak in amasi for at least an hour.
Slice an onion thinly, and fry in holsum along with a chopped chilli. Season to taste - until the onions are caramelized.
Remove from pan, add more holsum.
Remove liver from amasi, and dust lightly with heba pap.
Fry liver on both sides until browned. Make sure not to overcook the liver (must be a bit pink inside)
Add the onion mixture back and fry together for a minute or two.
Serve with caulimash!
